Hello friends!! In my last post, I talked about my recent discovery of delicious infused oil and vinegar. This post, I’m going to talk about the foods I used them in and include some yummy looking photos. So I’ve tried a few dishes in the past, thanks to my mom, but on my own I was clueless. So I did some research. Of course now I can’t find the sites I found my information from, so I’ll paraphrase what I can remember. So let’s get this party started.
White Truffle Oil A.K.A Yummm
About a year or so ago, I started hearing and seeing all sorts of rumbles about truffle this and truffle that. Like Evol’s truffle mac and cheese, or Lays truffle fries flavored french fries. But I never actually tried anything truffle outside of that. So when my mom gifted me this oil, I was a bit bewildered. I didn’t want this to end up just sitting on the shelf and I didn’t want to end up ruining it by using it incorrectly. So I googled about it. Fun fact: Truffle oil is a finishing oil, so from what I read, you don’t want to actually cook with it. You want to drizzle that baby.
I read that it’s amazing on eggs and potatoes especially, but I also used it on roasted veggies. Let me tell you, I have not been disappointed. The flavor is almost like garlic, but it’s not. I’ve seen it described as “woody” or “nutty” but I don’t think that justifies it either. It’s not overpowering either. I will have to remember to update the post as I find new ways to use the white truffle oil

Pineapple White Balsamic Vinegar
I love pineapple. I haven’t met a pineapple flavored food I didn’t like. I think I ate my weight in pineapple my last two pregnancies! So when I tasted this little gem, I knew it was the one. But again, I was at a loss for what to put it in. I could go the usual “throw it on a salad” route, but I didn’t have any salad. Then I remembered, the week before I had made sausage and peppers, and I added balsamic vinegar in an attempt to add something different to it. It hadn’t worked, I couldn’t taste it. So this time, once I had browned the sausage and added the peppers, I drizzled in that tasty pineapple infused vinegar and let it simmer. Wow. It was perfect.
So this weekend I figured why not add it to our makeshift salad. We were scrounging around for something other than the usual and I knew I had a big fat cucumber that I had purchased from the Tea Savy. Straight from the garden BTW. Throw in some grape tomatoes and sliced up carrots and Boom! Pineapple vinegar drizzle with salt and pepper on top. Oh it was so good!! This was better than any old grocery store salad dressing.
